2 packs of Sfiziosi Nuggets
2 medium cucumbers
20 cherry tomatoes
For the sauce
EVOO
a sprig of mint
3 limes
1 small glass of rum
1 teaspoon brown sugar
salt and pepper
METHOD
Cook the Sfiziosi Nuggets as indicated on the package.
Meanwhile, grate the zest and squeeze the juice of 2 limes and pour it into a bowl, add sugar, a few mint leaves and pound the ingredients with a pestle.
Add rum, season with salt and pepper and emulsify with 100 ml oil.
Wash the cucumbers and, using a mandoline or a Y-shaped peeler, cut them into thin ribbons.
Wash the cherry tomatoes too, then make skewers by threading 2 or 3 folded cucumber ribbons and a cherry tomato.
Serve the Nuggets with the vegetable skewers dipped in the mojito sauce!
